Ingredients
- For the Huli Huli Chicken:
- - 1/2 cup pineapple juice
- - 2 tablespoons soy sauce
- - 2 cloves garlic, minced
- - 1 teaspoon freshly grated ginger
- - 2 tablespoons brown sugar
- - 1 tablespoon sesame oil
- - 4 boneless, skinless chicken breasts
- For the Burrito Bowls:
- - 4 cups cooked white rice
- - 1 cup diced tomatoes
- - 1 cup diced bell peppers
- - 1/2 cup corn kernels
- - 1 avocado, sliced
Preparation
- 1. In a medium bowl, whisk together pineapple juice, soy sauce, garlic, ginger, brown sugar and sesame oil. Place chicken in a shallow dish or large resealable plastic bag and pour marinade over top. Refrigerate for at least 30 minutes or up to 8 hours.
- 2. Preheat grill to medium heat. Remove chicken from marinade and discard remaining marinade. Grill chicken for 5 minutes per side or until cooked through. Let cool slightly before slicing into strips.
- 3. To assemble burrito bowls, divide cooked white rice among four individual bowls and top with grilled huli huli chicken strips, tomatoes, bell peppers, corn and avocado slices. Serve immediately.

Serve these burrito bowls with extra hot sauce if desired!
