Homemade Pepsi

This homemade cola is a lot more satisfying than store-bought, and super easy to make right in your kitchen. You just need a few simple ingredients and time for it to steep a bit. Make sure you use pure vanilla extract, not imitation varieties; check the label to be sure. Using cane sugar adds sweetness and complexity, but this recipe accepts all kinds of sugars: honey, agave nectar, or good old beet or cane white sugar. You can also adjust the flavors with citric acid crystals or lemon juice for tartness.

Ingredients
- Syrup:
- - 2 cups cane sugar
- - 1 cup water
- - 2 teaspoons pure vanilla extract
- - 1/4 teaspoon citric acid crystals or 1 tablespoon lemon juice (optional)
- Cola:
- - 4 cups cold water
- - 2 tablespoons syrup
Preparation
- 1. To make the syrup, combine the sugar and water in a medium saucepan over medium heat. Stir until the sugar is completely dissolved. Remove from heat and stir in the vanilla extract and citric acid crystals or lemon juice, if using. Let cool to room temperature before using.
- 2. To make the cola, combine 4 cups of cold water with 2 tablespoons of the syrup in a pitcher or large jar. Stir until combined.
- 3. Refrigerate for at least an hour before serving, as this will give it time to steep and develop flavor. Serve over ice with a lime wedge for garnish, if desired.
Notes
This homemade cola will keep in the refrigerator for up to two weeks; just shake well before serving each time! Enjoy!
