Creamed Horse Hash

Creamed horse hash is an old-fashioned dish that's dating back as far as the 1800s. This tasty main dish combines potatoes, bacon or ham, onions, carrots and horse meat. Ingredients

  • - 2 tablespoons of butter
  • - 1/4 cup of all-purpose flour
  • - 2 cups of milk
  • - 2 cups of cooked, diced horse meat
  • - 1 cup of cooked, diced potatoes
  • - 1/2 cup of cooked, diced bacon or ham
  • - 1/2 cup of chopped onions
  • - 1/2 cup of chopped carrots

Preparation

  1. 1. In a large saucepan, melt the butter over medium heat. Add the flour and stir until combined. Gradually add the milk and whisk until smooth.
  2. 2. Add the horse meat, potatoes, bacon or ham, onions and carrots to the saucepan and stir to combine. Simmer for 10 minutes or until heated through and thickened.
  3. 3. Sprinkle with cheese and serve hot with toast or biscuits.

Notes

This dish can be made ahead of time and reheated before serving. If using leftovers, adjust cooking time accordingly as larger pieces may take longer to cook through.
