Afghan Mantu

Mantu, popular Afghan dumplings, are filled with a fragrant mix of minced beef and onions and steamed in a special pan called a mantiya. Teetering stacks of mantu line the counters of Afghani restaurants all over the world. Making this traditional dish may take time, but the effort is worth it — each bite bursts with flavor. Serve mantu with a dollop of plain yogurt or a creamy garlic yogurt sauce. For an even more flavorful experience, top them off with earthy dried mint and grated Sauteed Onion.

Ingredients

  • Filling:
  • - 1/2 pound ground beef
  • - 1 onion, minced
  • - 2 cloves garlic, minced
  • - 1 teaspoon ground cumin
  • - 1 teaspoon ground coriander
  • - Salt and pepper to taste
  • Dough:
  • - 2 cups all purpose flour
  • - 1 teaspoon salt
  • - 2 tablespoons vegetable oil
  • - 3/4 cup warm water

Preparation

  1. 1. To make the filling, heat a large skillet over medium heat. Add the beef and cook until browned. Add the onion, garlic, cumin, coriander, salt and pepper. Cook until the onions are softened and fragrant. Remove from heat and set aside to cool.
  2. 2. To make the dough, combine the flour and salt in a large bowl. Make a well in the center of the mixture and add the oil and water. Mix together with your hands until it forms a soft dough. Knead for 5 minutes until smooth. Cover with plastic wrap or a damp cloth and let rest for 30 minutes.
  3. 3. Divide the dough into 8 equal pieces and roll each piece into a thin circle about 6 inches in diameter on a lightly floured surface. Place about 2 tablespoons of filling in the center of each circle of dough then fold up like an envelope to enclose it completely. Pinch edges together to seal them tightly so that no filling escapes during cooking.
  4. 4. Place mantu in steamer basket lined with parchment paper or cheesecloth (to prevent sticking). Steam for 20 minutes or until cooked through (test one by cutting it open). Serve hot with yogurt sauce or dried mint and Sauteed Onion topping if desired!

Notes

Mantu can be served as an appetizer or as part of a main course meal!
