Elven Lembas Bread

Lembas bread is a type of Elven bread featured in The Lord of the Rings. Make something special for your next hobbit gathering with this recipe, inspired by what Tolkien describes as “a large thin cake” with a mix of subtle spices. Ingredients

  • Dry Ingredients:
  • - 2 cups spelt flour
  • - 1 teaspoon baking powder
  • - 1/2 teaspoon baking soda
  • - 1/4 teaspoon salt
  • - 1 teaspoon ground cinnamon
  • - 1/2 teaspoon ground nutmeg
  • Wet Ingredients:
  • - 2 tablespoons melted butter or coconut oil
  • - 3 tablespoons honey
  • - 2 eggs, lightly beaten

Preparation

  1. 1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan with butter or coconut oil.
  2. 2. In a large bowl, whisk together the dry ingredients.
  3. 3. In a separate bowl, mix together the wet ingredients until well combined.
  4. 4. Add the wet ingredients to the dry ingredients and stir until just combined (do not overmix).
  5. 5. Pour the batter into the prepared pan and spread evenly with a spatula. Bake for 25 minutes or until golden brown and a toothpick inserted into the center comes out clean. Let cool before slicing into 12 pieces.
