Sharing Love Beignets

Beignets, those pillowy fritters of Louisiana heritage, are traditionally made with a yeasted dough, deep-fried and showered with powdered sugar. But this Valentine's Day version relies on sourdough starter instead, adding flavor and making them virtually foolproof. Although the beignets are delicious as is, let your valentine go wild on candy sprinkles, grated chocolate or sliced berries to decorate.

Ingredients
- Dough:
- - 1/2 cup sourdough starter
- - 2 tablespoons sugar
- - 2 tablespoons butter, melted
- - 1 teaspoon salt
- - 1/4 teaspoon baking soda
- - 1/2 cup warm milk
- - 2 cups all purpose flour, plus more for rolling out dough
- Frying:
- - Vegetable oil, for frying
Preparation
- 1. In a large bowl, mix together the sourdough starter, sugar, butter, salt and baking soda until combined. Stir in the warm milk until smooth. Gradually add the flour and stir until a soft dough forms. Knead the dough on a lightly floured surface for about 5 minutes or until it is smooth and elastic. Place the dough in an oiled bowl and cover with plastic wrap. Let rise in a warm place for about 1 hour or until doubled in size.
- 2. On a lightly floured surface roll out the dough to about 1/4 inch thick. Cut out circles using a biscuit cutter or glass and place them on parchment paper lined baking sheets. Cover with plastic wrap and let rise again for 30 minutes or until puffy.
- 3. Heat 3 inches of vegetable oil in a heavy bottomed pot over medium heat to 350°F (175°C). Fry beignets in batches of 4 or 5 at a time for about 2 minutes per side or until golden brown and cooked through. Remove from oil with slotted spoon onto paper towels to drain excess oil. Sprinkle with powdered sugar while still hot if desired before serving!

Serve these beignets hot as soon as possible after frying! Enjoy!
